Elizabeth Kopp

This was my second RMC and I really enjoyed attending it. I participated in Iron Chef, the processed meats judging, undergraduate quiz bowl and was part of the undergraduate poster competition. I was able to learn a lot and reconnect with friends from last year's RMC. One of my favorite sessions was Increasing Interest in Meat Production/Processing Renewed Focus on Old-World Artisan Meats and Charcuterie because Phil was a great speaker and the topic was something that I haven't heard much of before. This scholarship was helpful in allowing me to travel to RMC and I am very thankful to have received it.
