AMSA Educational Webinar: Cultured Meat as a Platform for New Foods

Overview:
Cell culture offers a platform not just for the reproduction of traditional meat products, but for the generation of new foods with novel properties. Here, we discuss how invertebrate and mammalian cells can be used to improve the value proposition of cultured meat and help bring cultured meat products to market.

Presenters:
Natalie Rubio is a 3rd year PhD student and New Harvest Research Fellow in Dr. David Kaplan's biomedical engineering group at Tufts University. Her research interests include invertebrate tissue engineering and mushroom-based scaffold fabrication. Previously, Natalie worked at New Harvest, the 501(c)(3) organization accelerating breakthroughs in cellular agriculture, and at Perfect Day Foods, a company making animal-free milk via fermentation technology. Natalie is originally from Boulder, Colorado where she received a B.S. in Chemical & Biological Engineering from the University of Colorado, Boulder. She also serves as a scientific advisor for Bond Pet Foods, a Colorado-based cultured meat company in the pet food space.

Andrew Stout is a 2nd year PhD student and New Harvest Fellow in Dr. David Kaplan's biomedical engineering group at Tufts University. His work focuses on tissue and nutritional engineering for cultured meat applications. Previously, Andrew worked in Dr. Mark Post's lab at Maastricht University, where he studied biomaterials for cultured meat, and at Geltor, Inc. where he worked to develop recombinant collagen production technologies. Andrew is originally from Portland, Oregon, and holds a B.S. in Materials Science from Rice University.
