AMSA 2021 RMC August 15-18, 2021 in Reno, NV

We are very excited about the program that we have for the 74th Reciprocal Meat Conference (RMC) 2021. The planning committee has done a great job developing an outstanding program for RMC 2021, with Keynote and Concurrent speakers identified and confirmed with a p<0.05. I think that may make us academics publishable. We would like to thank Robin Peterson, Barbara Coty, and Steven Lonergan for their efforts in chairing keynote sessions. These sessions include Jack Bobo, CEO of Futurity, delivering a keynote lecture on Monday titled Navigating the Future of Meat. On Tuesday, Nick Roth and Manpreet Singh will deliver a keynote session, sponsored by Empirical Foods, on Innovations in Food Safety. On Wednesday, Teresa Davis, Baylor College of Medicine will deliver a keynote on the nutritional importance of animal protein in the diet, with an emphasis on the growth and development of children.

We are grateful to the concurrent chairs: Ranjith Ramanathan, Tim Knight, Thu Dinh, Surendranath Suman, John Marcy, KatieRose McCullough, Kaitlyn Compart, Melissa Bamsey, Jerry Cannon, Christy Bratcher, Heather Bruce, and David Hayden. These chairs have done an awesome job with their sessions and have identified speakers that are working on cutting edge research and technology. These sessions will include novel information pertaining to Ingredient Technology in Processed Meats, Meats Role in the Diet and our World, Pre-harvest effects on Meat Quality, Addressing food insecurity through Preventing Food Waste, Meat Industry Innovations in Quality and Safety, and Meat Processing vs Alternative Protein Processing.

Mahesh Nair and Liz Boyle have done a great job chairing the reciprocation subcommittee and working with that group to finalize the reciprocation sessions. There are approximately 20 reciprocation sessions planned that are very diverse and focus on many topics, including but not limited to human nutrition, alternative curing systems, processed meats, live animals, meat properties, meat safety, cultured and plant-based protein analogs, and the meat business. The program has shaped up nicely and we look forward to sharing all of the specific details with you very soon.

We look forward to seeing you at the Grand Sierra Resort and Casino in Reno, Nevada, on August 15-18, 2021 in person if possible, but if you can’t make it in person, we hope to see you virtually since we are building the meeting as a hybrid.
