Cody Gifford, Ph.D.

Dr. Cody Gifford is an Assistant Professor of Meat Science in the Department of Animal Science at the University of Wyoming. Dr. Gifford earned B.S., M.S. and Ph.D. degrees in Animal Science from Colorado State University in 2013, 2016 and 2019. In addition, he earned his M.S. in Food Science & Human Nutrition from Colorado State University in 2016 and is a Registered Dietitian. His research program is focused in two areas: characterizing the role of meat products in human dietary patterns and understanding meat consumption; and assessing live animal and carcass management factors that impact meat quality, flavor, and palatability. In addition to his research appointment, he teaches two upper-division courses in meat science and animal growth development principles. Dr. Gifford is engaged in extension programming focused on applied information for consumers, producers, and meat processors in Wyoming and at regional and national meetings. Dr. Gifford serves as the faculty supervisor of the University of Wyoming Meat Laboratory and as the meat scientist member of the Scientific Advisory Council of the World Food Logistics Organization (WFLO), a Core Partner of the Global Cold Chain Alliance (GCCA).
