Dinner Sausage: It's More Than Just the Sizzle!

The 2022 Beyond Fresh Meat (BFM) Short Course will be held March 11-13th at Tyson Food’s Discovery Center in Downer Grove, Illinois! Participants will get an in-depth, hands-on experience in the dinner sausage category. You will also have- the opportunity to broaden your technical skill set while gaining an understanding of what R&D food scientists do every day.

BFM 2022 Program

  • Dinner Sausage Formulation & Processing
    • Natural casing, co-extrusion, skinless dinner sausage processing
    • How to formulate with fat target, salt targets, label constraints and claim adherence
  • Developing with Intent
    • Cross-functional collaboration with FSQA, Regulatory, Procurement, and Marketing
    • Product design process (stage-gate, innovation vs optimization)
  • Going Beyond the Science
    • Consumer expectations
    • Career development

Tyson Foods will cover the following to those students chosen to participate in BFM: transportation to our Discovery Center, lodging in Downers Grove, and meals throughout the event. Candidates can either be undergraduate or graduate students seeking to learn more about the meat industry. To qualify, students must the following questions and submit their resume:

  • What are your career aspirations?
  • Where do you see yourself academically or professionally in 2-3 years?
  • Why are you interested in participating in the Beyond Fresh Meat short course at Tyson Foods?

Covid-19 Vaccination Requirement

Tyson Foods now requires all visitors to our facility to show proof of vaccination against Covid-19 prior to visiting our facility. Please consider your ability to meet this requirement when applying. If you are unable to meet this requirement, we will not be able to consider your application further as the program will take place at our facility.
