AMSA 78th RMC Tuesday Keynote will Focus on Science, Society, and the Future of Meat

The keynote presentation will feature Dr. Keith Belk, Professor and Holder of the Monfort Endowed Chair at Colorado State University.

 The American Meat Science Association (AMSA) is proud to announce a thought-provoking session sponsored by Cargill at the 78th Reciprocal Meat Conference (RMC), taking place on June 24, 2025, in Columbus, Ohio. The keynote presentation will feature Dr. Keith Belk, Professor and Holder of the Monfort Endowed Chair at Colorado State University, who will present on The Societal Role of Meat & Livestock: Science, Misinformation, and Public Responsibility.”

  Building on the momentum of two global meetings on the societal role of meat and livestock, Dr. Belk will reflect on the intent and outcomes of both the Dublin Declaration—developed during the 2022 international summit in Dublin, Ireland—and the Denver Call to Action, which emerged from the 2024 summit in Colorado. His keynote will explore how these efforts have advanced a unified call for the responsible use of science, evidence-based policy, and informed public dialogue around meat and livestock systems.


 Dr. Belk will explore the appropriate and inappropriate uses of science, the challenges of translating complex research into public understanding, and the ethical responsibilities of academic, industry, and policy leaders in shaping the global dialogue around meat and livestock production.

 Dr. Belk serves as Professor and Holder of the Monfort Endowed Chair in the Center for Meat Safety & Quality at Colorado State University (CSU) and as an Adjunct Professor in the Colorado School of Public Health. Formerly Head of CSU’s Department of Animal Sciences, he holds degrees from CSU and Texas A&M University. His career includes roles in industry (Safeway, USDA Agricultural Marketing Service) and academia, with over 276 peer-reviewed articles, more than 530 invited presentations, and $23 million in research funding. He served as President of AMSA (2009–2010) and continues to advise major industry and academic institutions worldwide.
