AMSA 78th RMC Announces Technical Session on Meat & Human Health: Nutrition, Research, and Real-World Relevance
The American Meat Science Association (AMSA) is excited to announce that Drs. Ayood, Belury, and Gifford will present in the Concurrent Session on “Meat & Human Health: Nutrition, Research, and Real-World Relevance”, on Monday, June 23, 2025, sponsored by the National Pork Board at the 78th Reciprocal Meat Conference (RMC). This session will explore the role of meat in human health across life stages, from childhood to adulthood, highlighting its nutrient contributions, evolving research, and relevance in modern dietary patterns. Speakers will address persistent misconceptions, share practical insights from clinical and academic perspectives, and examine how scientific evidence informs public health guidance. Discussions will cover dietary fats, nutrient density, processed food classifications, and the state of nutrition science related to meat—framing key research gaps and opportunities for future investigation.
Kids, Meat Facts & Meat Myths: Helping Parents Choose Science Over Sensation
Dr. Ayoob will provide insights into the value of meat in the diet from a medical and pediatric standpoint. He will discuss how scientific findings can be translated into practical advice, emphasizing the importance of understanding consumer perceptions and nutritionist community perspectives on meat. Drawing from his practice, he will address misinformation and share actionable strategies for scientists to communicate the role of meat more effectively to diverse audiences.

Dietary Fats: Weighing the Options
There are many types of fats that impact human health. Beef, a protein package with many essential nutrients also contains fatty acids that may improve health. Dr. Belury will review fundamental information about dietary fats in the human diet. Attendees will also learn about emerging science regarding how some fatty acids alter energy metabolism and diseases associated with obesity. Finally, attendees will hear practical tips on incorporating beef and other sources of nutrients into a balanced diet with healthy fats.

Rethinking Meat in Nutrition Science
Dr. Gifford will share research from his lab on the role of meat in the diet and how it helps address key gaps in nutrition science. He will also discuss how meat has been categorized in the Dietary Guidelines for Americans Scientific Report, noting areas where additional research could strengthen future updates. Topics include the difficulty of accurately estimating U.S. dietary intake, the complexity of nutrient profiles, and how these relate to current definitions of “processed foods.”
