Iowa State University Intercollegiate Meat Judging Contest
Contest Date: March 4, 2023
Contest Components
- The format of the contest will be for a typical intercollegiate meat judging contest, with the addition of a keep/cull turkey carcass class, a retail cut class, and processed meat classes such as (but not limited to) slab or sliced bacon, bellies, boneless hams, cured center-cut ham slices, and summer sausages. Information on the poultry and processed meat classes will be sent to all schools upon request, and additional information may be found on the AMSA website, in the Meat Evaluation Handbook, and on YouTube. It is the desire of the ISU official committee to provide an educational experience in the evaluation of traditional beef, lamb, and pork as well as processed meats and poultry, which are an increasingly major sector of the meat industry.
