Presentations from Larry Quint (Conagra Brands), Jeff Sindelar, Ph.D. (University of Wisconsin–Madison), and Bailey Harsh, Ph.D. (University of Illinois) will cover consumer trends influencing value-added meat products, muscle biology factors driving functionality, and the impacts of carcass weight and fresh meat quality on processing outcomes. Moderated by Ben Bohrer, Ph.D. (The Ohio State University), who will clarify processed meat terminology using the AMSA Meat Lexicon and frame the ultra-processed foods debate in the context of nutrition, shelf life, and food waste.
