SALUMI 101: Merging the Art and Science of Dry Cured Meats

SALUMI 101 is a three-day, hands-on educational opportunity to learn about the production of safe and high quality artisan-style meats. Participants will have the chance to interact with industry and university professionals that specialize in this area of meat science. The class will be receiving instruction on and get involved with the crafting of various artisan products.

SALUMI 101 is sponsored by AMSA and supported by the University of Wisconsin-Madison, North Carolina State University, California State University-Fresno, and Pennsylvania State University.

Who should attend SALUMI 101?

Anyone with a passion for learning more about the art and science of crafting high quality artisan meat products will benefit from attending SALUMI 101.

Day 1: 8:00am - 5:00pm- North Carolina State University Meat Lab
Day 2: 8:00am - 5:00pm - North Carolina State University Meat Lab and Group dinner starting at 6:30 pm
Day 3: 9:00am -1:00pm - will be at North Carolina Central University in Durham, NC

Registration is not open for 2025 at this time. 

​Registration for AMSA, AAMP, NAMI, SEMA, and SMA members is $950. Non-member registration is $1150.  For AAMP, NAMI, SEMA, and SMA members please contact Deidrea Mabry, dmabry@meatscience.org, to receive the member discounted price. Registration is capped at 30 participants.

Lodging:

There is no set room block for the SALUMI 101. The hotels listed below are suggested as they are close to the North Carolina State University. Attendees are responsible for their own transportation to and from the North Carolina State University campus.

Cancellation Policy:

To be eligible for a refund of event registration fees, requests must be received in writing.  Registrants who cancel SALUMI 101 reservations prior to three weeks before the conference will have their registration fees refunded less a $75 cancellation fee.  Cancellations after the three week point will not be refunded.
