Presenters:

Marcia ReevesMarcia Reeves currently serves as Pilgrim’s Head of R&D & Innovation, leading all product development and renovation efforts for Pilgrim’s in the US. Prior to joining Pilgrim’s, Marcia spent 13 years with Tyson Foods R&D. While earning her BS & MS degrees in Meat Science from Oklahoma State University, she had the career path defining opportunity to participate on and coach meats judging teams representing OSU. Marcia lives in northern Colorado with her husband, Curtis, and their three children, Katy, Jacob, and Isaac, where they all enjoy taking advantage of the proximity to the mountains for hiking, camping, and skiing.

Bryce Gerlach3715 (1)Bryce Gerlach received his BS in Animal Science from the University of Nebraska-Lincoln and MS/PhD in Meat Science from Kansas State University. Bryce has worked for Tyson Foods in Research and Development for 7 years where he is currently a Sr. Manager in Product Development for the case ready red meat business. Bryce’s focus at Tyson has been on value added marinated red meat, seasoned red meat, fresh sausage, and shelf life research of case ready red meat. Bryce has managed multiple R&D interns and is currently overseeing the R&D internship program for Tyson Foods’ Springdale, AR and Downers Grove, IL locations.

phillips-mckensie_2811McKensie Phillips is an assistant lecturer and internship program coordinator in the Animal Science Department at the University of Wyoming. Her primary role is to teach undergraduate courses in meat science, specifically those related to carcass evaluation, livestock harvest, carcass fabrication, and meat processing. Beyond these, she also teaches an introductory food science course, as well as an animal science communication course. In her role as internship coordinator, McKensie assists students in finding internships that best fit their needs and interests. She is able to do this by working diligently to know her students and stay connected with industry employers. McKensie earned her B.S. in Animal and Veterinary Sciences from the University of Wyoming and M.S. in Animal Science (focus in Meat Science) at Texas A&M University.
