Dr. Lynn McMullen is a Professor of food microbiology in the Department of Agricultural, Food and Nutritional Science at the University of Alberta. In this webinar Dr. McMullen covered some of the basic fundamentals of meat microbiology and the impact of processing and packaging on the microbial ecology and safety of meats.
