AMSA 72nd RMC “Trash to One, Treasure for Another” – Food Waste Management and Recycling  Speakers Announced

Champaign IL. April 11, 2019 – The American Meat Science Association (AMSA) is pleased to announce, Katherine Miller, Dr. Dana Kirk, and Patrick Bultema will be the featured speakers at the AMSA 72nd Reciprocal Meat Conference (RMC) Symposium entitled “Trash to One, Treasure for Another” – Food Waste Management and Recycling,” on Monday, June 24 in Loveland, CO. This session will be sponsored by Kemin Food Technologies. The AMSA 2019 RMC is co-hosted by Colorado State University and JBS USA Food Company.

The featured presentations include:

Changing Kitchens, Inspiring Chefs and Ending Food Waste: Come listen to Katherine Miller, Vice President of the James Beard Foundation and the founding Executive Director of the Chef Action Network (CAN) discuss how the James Beard Foundation is ending food waste. In 2018 the James Beard Foundation launched a multi-channel campaign to reduce food waste in America's restaurants and homes including a consumer facing cookbook (Waste Not) featuring hundreds of the country's best chefs and an online training tool for culinary instructors. Chefs around the country are participating in this effort – in addition to advocating for common sense policies – to help reach global goals of a 50% reduction in food waste by 2030.

The Food Waste Challenge: Technologies to Address the Global Problem: Food waste is a global challenge with roughly one third of food production being lost through the value change. In this presentation Dr. Dana Kirk, Assistant Professor in Biosystems and Agricultural Engineering at Michigan State University, will discuss how waste to resource technologies like anaerobic digestion and composting offer solutions to food waste that cannot be repurposed for human or animal uses.

Exploring the Growing Crisis of Food Waste: Causes and Solutions: During this presentation Patrick Bultema, Founder and CEO of FoodMaven, will describe the various points in the food system where waste occurs and the systemic factors that drive waste at different levels of the supply chain. He will explore the environmental and social impacts as a result of food waste, and solutions necessary to mitigate this growing crisis that offer economic and humanitarian benefits while providing a true farm to fork option.
